A good brownie doesn't need much. Butter, sugar, chocolate, eggs — that's really the whole story. What makes the difference is not overmixing, not overbaking, and pulling them out just before you think they're done. The edges will be set. The center will still look a little soft. That's exactly right. Let them cool and you'll have something people talk about.

Ingredients

The Batter
Butter, melted½ cup (1 stick)
Granulated sugar1 cup
Eggs2 large
Vanilla extract1 tsp
Unsweetened cocoa powder⅓ cup
All-purpose flour½ cup
Salt¼ tsp
Baking powder¼ tsp
Optional Add-Ins
Chocolate chips½ cup
Chopped walnuts or pecans½ cup

Steps

  • 01Preheat oven to 350°F. Grease an 8x8 inch baking pan or line it with parchment paper leaving a little overhang on the sides — this makes lifting them out much easier.
  • 02In a medium bowl, whisk melted butter and sugar together until combined. Add eggs and vanilla and whisk until the mixture is smooth and slightly lighter in color, about 1 minute.
  • 03Add cocoa powder, flour, salt, and baking powder. Stir gently with a spatula until just combined — do not overmix. A few folds is all it takes. Fold in chocolate chips or nuts if using.
  • 04Pour batter into the prepared pan and spread evenly. Bake 20–25 minutes. The edges should be set and the center should look just slightly underdone. A toothpick will come out with a few moist crumbs — that's perfect.
  • 05Cool completely in the pan before cutting. I know it's hard to wait. But cutting them warm means they fall apart. Give them at least 30 minutes and you'll get clean, beautiful squares every time.

Pull Them Early
The number one brownie mistake is overbaking. Pull them when the center still looks a little soft and the toothpick has moist crumbs. They finish cooking in the pan as they cool. Every time.

Don't Overmix
Once the flour goes in, stir only until you don't see dry streaks. Overmixing makes brownies tough and cakey instead of soft and chewy. Gentle folds with a spatula — that's your whole job.

Butter Over Oil
Melted butter gives these brownies a richer flavor than vegetable oil. Make sure it's fully melted but not hot when you add the eggs or you'll scramble them. Just warm is perfect.

Clean Cuts Every Time
For perfect squares, let them cool completely then use a sharp knife wiped clean between each cut. Or refrigerate them for 30 minutes first — cold brownies cut like a dream.
