Yellow cornmeal1 cup
All-purpose flour1 cup
Sugar¼ cup
Baking powder1 tbsp
Salt½ tsp
Wet
Buttermilk1 cup

Butter, melted¼ cup

Preheat with the Skillet
Preheat oven to 425°F. Place a 10-inch cast iron skillet in the oven while it preheats. This is the secret to the crispy crust.

Mix Dry Ingredients
In a large bowl whisk together cornmeal, flour, sugar, baking powder, and salt.

Mix Wet Ingredients
In a separate bowl whisk together buttermilk, eggs, and melted butter.

Combine
Pour wet into dry and stir until just combined. Do not overmix. A few lumps are perfectly fine.

Butter and Pour
Carefully remove hot skillet from oven. Add a tablespoon of butter and swirl to coat. Pour in batter immediately — it will sizzle.

Bake and Serve
Bake 20 to 25 minutes until golden brown on top and a toothpick comes out clean. Serve warm directly from the skillet.

A cast iron skillet gives you that signature crispy golden crust. A regular baking pan works but it will never be the same.

No Buttermilk? No Problem
Add one tablespoon of white vinegar or lemon juice to a cup of regular milk and let it sit 5 minutes. Works perfectly.

Add Jalapeños
Fold in diced jalapeños and shredded cheddar for a spicy savory version that goes perfectly with chili or barbecue.

Serve Immediately
