Carrot cake is one of those desserts that surprises people every single time. They hear carrots and they hesitate. Then they take one bite and they want the whole thing. The cream cheese frosting is non-negotiable. Do not substitute it with anything else.

The Cake
All-purpose flour2 cups
Sugar2 cups
Baking soda2 tsp
Cinnamon2 tsp
Salt1 tsp
Vegetable oil1½ cups
Eggs4
Vanilla extract2 tsp
Carrots, grated3 cups
Chopped walnuts1 cup
Cream Cheese Frosting
Cream cheese, softened16 oz
Butter, softened½ cup
Powdered sugar4 cups
Vanilla extract2 tsp

Instructions

Preheat and Prep
Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
Whisk together flour, sugar, baking soda, cinnamon, and salt in a large bowl.

Add Wet Ingredients
Stir in oil, eggs, and vanilla until combined. Fold in grated carrots and walnuts.

Bake
Divide batter evenly between prepared pans. Bake 30 to 35 minutes until toothpick comes out clean.

Make the Frosting
Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla. Beat until light and fluffy.

Cool and Frost
Cool cakes completely before frosting. Place first layer on plate, frost top, add second layer, frost top and sides.

Grate Your Own Carrots
Pre-shredded carrots from the bag are too dry and coarse. Freshly grated carrots give you the moisture and texture this cake needs.

Room Temperature Frosting
Both the cream cheese and butter must be fully softened for the frosting to come together smooth and fluffy with no lumps.

Chill Before Serving
Refrigerate the frosted cake for at least an hour before serving. The frosting sets and the cake slices much cleaner when cold.

Toast the Walnuts
Toast walnuts in a dry pan for 5 minutes before adding to the batter. It deepens the flavor significantly.
