Sugar1½ cups
Cocoa powder1 tbsp
Baking soda1 tsp
Salt1 tsp
Buttermilk1 cup
Vegetable oil1½ cups
Eggs2
Red food coloring2 tbsp
Vanilla extract1 tsp
White vinegar1 tsp
Cream Cheese Frosting
Cream cheese, softened16 oz
Butter, softened½ cup
Powdered sugar4 cups
Vanilla extract1 tsp

Instructions

Step by step

Preheat and Prep
Preheat oven to 350°F. Grease and flour two 9-inch round cake pans. Line bottoms with parchment paper.

Mix Dry Ingredients
Sift together flour, sugar, cocoa powder, baking soda, and salt into a large bowl.

Mix Wet Ingredients
In a separate bowl whisk together buttermilk, oil, eggs, food coloring, vanilla, and vinegar.

Combine
Pour wet into dry and mix until just smooth and combined. Do not overmix.

Divide batter between pans. Bake 28 to 30 minutes until toothpick comes out clean.

Frost and Assemble
Beat cream cheese and butter smooth. Add powdered sugar and vanilla and beat fluffy. Cool cakes completely then frost generously.

Use gel food coloring instead of liquid for a deeper more vibrant red color. You need less of it and the color is more intense.

Buttermilk is Essential
The buttermilk reacts with the baking soda and vinegar to give red velvet its signature tender crumb. Do not substitute with regular milk.

Save the Crumbs
Save some cake crumbs from leveling the layers and press them onto the sides of the frosted cake for a beautiful red crumb coating.
