Real strawberry shortcake is made with buttery biscuits — not sponge cake — and fresh strawberries that have been macerated in sugar until they release their own sweet syrup. That syrup soaks into the warm biscuit and creates something you simply cannot get from a box.

What you'll need

The Biscuits
All-purpose flour2 cups
Sugar¼ cup
Baking powder1 tbsp
Salt½ tsp
Butter, cold and cubed½ cup
Heavy cream¾ cup
The Strawberries
Fresh strawberries, sliced4 cups
Sugar¼ cup
Whipped Cream
Heavy whipping cream2 cups
Powdered sugar3 tbsp
Vanilla extract1 tsp

Macerate the Strawberries
Toss sliced strawberries with sugar. Let sit at least 30 minutes. They will release their own beautiful syrup.

Make the Biscuits
Preheat oven to 425°F. Whisk flour, sugar, baking powder, and salt. Cut in cold butter until pea-sized. Stir in cream just until dough comes together.

Shape and Bake
Pat dough to 3/4-inch thickness and cut into rounds. Place on baking sheet. Brush tops with cream and sprinkle with sugar. Bake 12 to 15 minutes until golden.

Whip the Cream
Beat cold heavy cream with powdered sugar and vanilla until soft peaks form. Do not overbeat.

Assemble and Serve
Split warm biscuits in half. Spoon strawberries and syrup over bottom half. Add a generous dollop of whipped cream. Place top half on and serve immediately.

Macerate the Berries
Do not skip the sugar and resting time. The syrup that forms is the soul of strawberry shortcake. Give it at least 30 minutes — an hour is even better.

Keep Butter Ice Cold
Cold butter creates steam pockets as it bakes giving you flaky layered biscuits. If your butter gets warm pop the whole bowl in the freezer for 10 minutes.

Mix Your Berries
Add some blueberries or raspberries to your strawberries for a beautiful mixed berry shortcake. All the same technique — just more color and flavor.
Assemble at the Last Minute
Assemble individual shortcakes right before serving. Pre-assembled shortcakes get soggy quickly. Keep components separate until serving time.
