Quiche sounds fancy but it is really just a savory egg pie. Once you know the base custard ratio everything else is just what you put inside. Make it for brunch and people will think you spent all morning in the kitchen.

Eggs4
Milk or cream¾ cup
Vanilla extract1 tsp
Cinnamon1 tsp
Sugar1 tbsp

Make the Custard
Whisk together eggs, milk, vanilla, cinnamon, sugar, and salt in a shallow bowl wide enough to dip the bread.

Heat the Pan
Heat a skillet over medium heat. Add butter and let it melt and foam before adding bread.

Soak the Bread
Dip each slice in the custard for about 20 seconds per side. Thick bread needs a longer soak to absorb all the way through.

Cook soaked bread 2 to 3 minutes per side until deep golden brown. Do not rush — medium heat is the key to crispy outside and custardy inside.

Use Day Old Bread
Slightly stale thick bread like brioche, challah, or Texas toast absorbs the custard without falling apart. Fresh bread gets soggy.

Heavy Cream is Better
Substitute half and half for the milk. The fat content creates a richer custard that tastes like it came from a restaurant.

Real Maple Syrup Only
After putting this much care into your French toast please use real maple syrup. The fake stuff does not honor the effort.

Place finished pieces on a baking sheet in a 200 degree oven while you cook the rest. Everyone eats together and everything is hot.
