Ingredients

The Chicken
Bone-in chicken thighs or whole legs2.5 lbs
The Base
Yellow onion, quartered1 large
Carrots, sliced3 large
Celery, sliced4 stalks
Garlic cloves, smashed4 cloves
Chicken broth8 cups
Fresh parsley stemshandful
Fresh thyme3 sprigs
Bay leaves2
Salt and peppergenerously

Egg noodles or small pasta2 cups dry

Steps

  • 01Add chicken, onion, garlic, broth, thyme, parsley stems, and bay leaves to a large pot. Season with salt and pepper. Bring to a boil, then reduce to a gentle simmer.
  • 02Simmer 30–35 minutes until chicken is cooked through and tender. Skim any foam from the surface as it appears.
  • 03Remove chicken and let cool slightly. Shred the meat from the bones, discarding skin and bones. Strain the broth and discard the cooked aromatics.
  • 04Return strained broth to pot. Add fresh carrots, celery, and shredded chicken. Simmer 10 minutes until vegetables are tender.
  • 05Add egg noodles and cook according to package directions — usually 6–8 minutes. Taste the broth and adjust salt generously.
  • 06Serve immediately with fresh parsley on top. This soup heals. Serve it with love.

Bone-In = Better Broth
Bone-in chicken releases collagen and flavor as it cooks. The broth becomes richer, deeper. Don't use boneless breasts for this one.

Cooking the onion whole and straining it out leaves you with clean, clear broth. Then add fresh vegetables for the best texture.

Noodles Separately
If storing leftovers, keep noodles separate. Noodles in broth overnight get mushy. Cook them fresh each time you reheat.

Ingredients

The Soup
Canned whole tomatoes2 cans (28 oz each)
Yellow onion, diced1 medium
Garlic cloves, minced4 cloves
Butter2 tbsp
Olive oil1 tbsp
Tomato paste2 tbsp
Chicken or vegetable broth1.5 cups
Heavy cream½ cup
Fresh basil leaveshandful
Sugar1 tsp
Salt, pepper, red pepper flakesto taste

Steps

  • 01In a large pot, heat butter and olive oil over medium. Sauté onion 5 minutes until soft and translucent. Add garlic and tomato paste, cook 2 minutes until paste deepens in color.
  • 02Add canned tomatoes (crush them with your hand as you add them), broth, basil, and sugar. Season with salt, pepper, and a pinch of red pepper flakes. Bring to a simmer.
  • 03Simmer uncovered for 20 minutes, stirring occasionally. The flavors will deepen and meld.
  • 04Use an immersion blender to blend until completely smooth. No immersion blender? Carefully transfer to a countertop blender in batches — never fill it more than halfway with hot liquid.
  • 05Stir in heavy cream. Taste and adjust — more salt, more basil, another pinch of sugar if the tomatoes are acidic. Simmer 2 more minutes.
  • 06Serve with a swirl of cream, fresh basil, and the best grilled cheese you can make. Dip generously.

Whole Canned Tomatoes
San Marzano whole tomatoes are the gold standard. Crush them by hand going in. They have better flavor and less water than diced.

A Little Sugar
Just a teaspoon. It balances the acidity of the tomatoes without making the soup taste sweet. Don't skip it.

Immersion Blender
Blend right in the pot. Less mess, less risk of splashing hot soup. Worth having in the kitchen for soups like this.

The Grilled Cheese Matters
Butter the outside of your bread. Use real cheese. Cast iron if you have it. The dip situation deserves a proper grilled cheese.
