Ingredients

The Base
Butter4 tbsp
Yellow onion, finely diced1 medium
Garlic, minced3 cloves
All-purpose flour¼ cup
Chicken broth2 cups
Whole milk1.5 cups
Heavy cream½ cup
The Star
Broccoli florets, chopped small4 cups
Carrots, shredded or small dice1 cup
Sharp cheddar, freshly shredded2.5 cups
Salt, pepper, nutmeg, mustard powderto taste

Steps

  • 01Melt butter in a large pot over medium heat. Sauté onion 4–5 minutes. Add garlic, cook 1 minute. Whisk in flour and cook, stirring constantly, for 2 minutes until golden.
  • 02Slowly whisk in chicken broth, then milk and cream. Keep whisking to prevent lumps. Bring to a gentle simmer.
  • 03Add broccoli and carrots. Simmer 15–20 minutes until broccoli is very tender. Stir occasionally.
  • 04Optional: Use an immersion blender to partially blend — leave some texture. Or mash some broccoli against the side of the pot with a spoon.
  • 05Reduce heat to LOW. Add cheddar one handful at a time, stirring until fully melted before adding more. Season with salt, pepper, a pinch of nutmeg, and a pinch of mustard powder.
  • 06Serve immediately in bread bowls or regular bowls. Top with extra cheese and croutons if you have them.

Add cheese off high heat. High heat causes cheese to break and turn grainy. Low heat, one handful at a time, slow stir. That's the texture secret.

Chop broccoli into small bite-sized pieces. You want it to cook through and be in every spoonful — not giant tough florets.
