Golden breaded chicken, rich marinara, and melted mozzarella. Baked — not fried — but you'd never know the difference. Serve it over pasta or on its own. Either way, it wins.

Ingredients

The Chicken
Boneless chicken breasts, pounded thin4 pieces
Salt and pepperto taste
Breading Station
All-purpose flour½ cup
Eggs, beaten2 large
Italian breadcrumbs1 cup
Parmesan, grated½ cup
Garlic powder, Italian seasoning1 tsp each
Toppings
Marinara sauce1.5 cups
Fresh mozzarella or shredded1.5 cups
Fresh basilfor serving
Olive oil sprayfor baking

Steps

  • 01Preheat oven to 400°F. Line a baking sheet with a wire rack (for crispiness all around). Season chicken with salt and pepper.
  • 02Set up three shallow dishes: flour in the first, beaten egg in the second, and breadcrumbs mixed with Parmesan, garlic powder, and Italian seasoning in the third.
  • 03Dredge each piece: flour → egg → breadcrumbs. Press the breadcrumbs firmly onto the chicken. Place on the wire rack.
  • 04Spray both sides generously with olive oil spray. Bake 18–20 minutes until golden and cooked through (165°F internal).
  • 05Spoon marinara on each piece. Top generously with mozzarella. Return to oven 4–5 minutes until cheese is melted and bubbly.
  • 06Top with fresh basil and extra Parmesan. Serve over pasta or with garlic bread. Cut into it and watch that cheese pull.

Pound It Even
Even thickness means even cooking. A thick end and a thin end gives you dry one side, raw the other. Pound it flat first.

Wire Rack Trick
Baking on a wire rack lets hot air circulate under the chicken. Both sides get crispy. No soggy bottom.

Less Sauce is More
Don't drown it. A couple spoonfuls of sauce keeps the breading crispy. Too much and it gets soggy fast.

Fresh Basil at the End
Add fresh basil after it comes out of the oven. Heat kills the flavor. Fresh basil on hot chicken Parm is a different thing entirely.
