Ingredients

The Chicken
Boneless chicken breast or thighs, sliced thin1.5 lbs
Cornstarch2 tbsp
Soy sauce1 tbsp
The Sauce
Soy sauce3 tbsp
Oyster sauce2 tbsp
Sesame oil1 tsp
Brown sugar1 tbsp
Cornstarch1 tsp
Garlic, minced3 cloves
Fresh ginger, grated1 tsp
The Vegetables
Broccoli florets2 cups
Bell peppers, sliced2 peppers
Snap peas1 cup
Green onions4 stalks
Vegetable oil2 tbsp

Steps

  • 01Toss sliced chicken with cornstarch and 1 tbsp soy sauce. Let sit 10 minutes. Mix all sauce ingredients together in a small bowl. Have everything ready before the pan goes on — stir fry moves fast.
  • 02Heat oil in a wok or large skillet over HIGH heat until smoking. Add chicken in a single layer. Don't touch it for 2 minutes — let it sear. Flip and cook 2 more minutes. Remove and set aside.
  • 03In the same pan, add broccoli and peppers. Stir fry 3 minutes, tossing constantly. Add snap peas, cook 1 more minute.
  • 04Return chicken to the pan. Pour sauce over everything. Toss constantly for 2 minutes until sauce coats everything and thickens slightly.
  • 05Top with green onions and sesame seeds if you have them. Serve immediately over steamed white rice.

High Heat is Everything
Stir fry needs a screaming hot pan. Medium heat gives you steamed, soggy vegetables. High heat gives you that restaurant wok flavor.

Cornstarch on Chicken
Tossing raw chicken in cornstarch before cooking creates a light coating that locks in moisture and gives you that velvety texture in the finished dish.

Have everything cut, measured, and ready before you start. Stir fry doesn't pause for prep. Chop everything first, then turn on the heat.
