Hot & Creamy Buffalo Chicken Dip

Buffalo chicken dip is the one thing that always disappears first at any gathering. Always. I've never seen it last more than 20 minutes. Make a double batch. You'll need it.

Ingredients

The Dip
Cooked chicken, shredded2 cups
Cream cheese, softened8 oz
Frank's RedHot (or similar)½ cup
Ranch dressing½ cup
Shredded cheddar or Monterey Jack1.5 cups
Green onions (optional garnish)2 stalks
For Dipping
Tortilla chips, celery, crackers, breadas desired

Steps

  • 01Preheat oven to 375°F. In a large bowl, mix softened cream cheese, hot sauce, and ranch until smooth.
  • 02Fold in shredded chicken and 1 cup of the cheese. Mix well to combine everything.
  • 03Spread into a baking dish or cast iron skillet. Top with remaining ½ cup cheese.
  • 04Bake 20–25 minutes until hot, bubbly, and cheese on top is melted and golden at the edges.
  • 05Garnish with green onions. Set it out with chips, celery, and crackers. Stand back and watch it vanish.

Rotisserie chicken is the best shortcut here. Already cooked, already flavorful, shreds in two minutes. This dip comes together in 10 minutes flat.

Frank's RedHot is the classic buffalo sauce base. It has the right vinegar-to-heat ratio. Use it. Or make your own buffalo sauce from scratch.

Soften the Cream Cheese
Cold cream cheese won't blend smoothly. Let it sit at room temp for 30 minutes, or microwave 20 seconds. A smooth dip starts with soft cream cheese.

Cast Iron Looks Great
Bake and serve in a cast iron skillet. It keeps the dip hot longer and looks like you meant business when you set it on the table.
