Key lime pie is the dessert that proves less is more. Three ingredients in that filling — key lime juice, condensed milk, egg yolks. That's it. The simplicity is the genius. Get real key limes if you can. The flavor is worth the extra effort of squeezing them.

Ingredients

Graham Cracker Crust
Graham cracker crumbs1.5 cups
Butter, melted5 tbsp
Sugar3 tbsp
Key Lime Filling
Sweetened condensed milk2 cans (14 oz)
Key lime juice (fresh or bottled)¾ cup
Egg yolks4 large
Key lime zest1 tbsp
Topping
Heavy cream1 cup
Powdered sugar2 tbsp
Vanilla extract½ tsp

Steps

  • 01Preheat oven to 350°F. Mix graham crumbs, melted butter, and sugar. Press firmly into a 9-inch pie dish, going up the sides. Bake 8 minutes until set. Cool slightly.
  • 02Whisk condensed milk, key lime juice, egg yolks, and zest together until smooth. Pour into the warm crust.
  • 03Bake 15 minutes until filling is just set — it should jiggle slightly in the center but not be liquid. Cool completely, then refrigerate at least 2 hours, preferably overnight.
  • 04Whip cream with powdered sugar and vanilla to soft peaks. Serve each slice cold with a generous dollop of whipped cream and a thin lime slice.

Real Key Limes
Key limes are smaller and more tart than regular limes. Their juice has a distinct floral quality. If you can find them, use them. Bottled key lime juice is a solid backup.

Yolks Only
Only egg yolks go in the filling — no whites. The yolks make the filling rich and creamy with that beautiful pale yellow color. Whites would make it airy and less silky.

Pack the Crust
Press the graham crust firmly and evenly using the bottom of a measuring cup. A loose crust crumbles when you cut it. Pack it tight and bake it so it sets properly.

Serve Ice Cold
Key lime pie is meant to be served very cold. The filling firms up and the flavor brightens when it's properly chilled. Room temp key lime pie is a different — lesser — experience.
