Salmon is one of the fastest paths from fridge to table. Twenty minutes. One pan. And when you do it right, it's as good as anything you'd order at a restaurant. Don't overthink it — just don't overcook it.

Ingredients

The Salmon
Salmon fillets (6 oz each)4 fillets
Salt and black pepperto taste
Garlic Herb Butter
Butter, melted3 tbsp
Garlic, minced4 cloves
Lemon juice2 tbsp
Lemon zest1 lemon
Fresh dill or parsley, chopped2 tbsp
Dijon mustard1 tsp
Honey1 tsp

Steps

  • 01Preheat oven to 400°F. Line a baking sheet with foil and lightly oil it. Pat salmon dry with paper towels and season with salt and pepper.
  • 02Mix melted butter, garlic, lemon juice, zest, dill, Dijon, and honey together in a small bowl. Spoon generously over each fillet.
  • 03Bake 12–15 minutes depending on thickness. Salmon is done when it flakes easily with a fork and is opaque throughout. For medium doneness, pull at 125°F internal.
  • 04Optional: broil the last 2 minutes for a slightly caramelized glaze on top. Watch closely — it goes fast.
  • 05Serve with lemon wedges and extra herbs. Pairs beautifully with roasted asparagus, rice, or a simple salad.

Don't Overcook It
Overcooked salmon is dry and chalky. Pull it at 125°F for medium — it will carry-cook slightly. The center should still look slightly translucent.

Room Temp First
Let salmon sit at room temp 15 minutes before baking. Cold fish straight from the fridge cooks unevenly — cold center, overdone edges.

Lemon Both Ways
Zest goes in before baking for fragrance. A fresh squeeze of lemon right before serving brightens the whole dish. Both have a role.
