Spicy Shrimp Tacos with Creamy Slaw

Shrimp tacos hit different when the shrimp is properly seasoned and the slaw has a good crunch. The chipotle crema ties it all together. This is a taco that makes people stop talking and start eating.

Ingredients

The Shrimp
Large shrimp, peeled & deveined1.5 lbs
Chili powder1 tsp
Cumin½ tsp
Smoked paprika½ tsp
Garlic powder, salt, cayenne½ tsp each
Oil for cooking1 tbsp
Creamy Slaw
Green cabbage, shredded2 cups
Mayo3 tbsp
Lime juice2 tbsp
Honey1 tsp
Saltto taste
Chipotle Crema & Assembly
Sour cream½ cup
Chipotle in adobo, minced1–2 peppers
Lime juice1 tbsp
Small corn tortillas12
Cilantro, avocado, lime wedgesfor serving

Steps

  • 01Mix slaw ingredients and refrigerate 15 minutes — it gets better as it sits. Mix crema ingredients together and set aside.
  • 02Toss shrimp with all spices. Heat oil in a skillet over medium-high. Cook shrimp 1–2 minutes per side until pink and curled. Don't crowd the pan. Work in batches.
  • 03Warm tortillas directly over a gas flame or dry skillet — 30 seconds per side with a little char is the goal.
  • 04Build the taco: slaw first, then shrimp, then chipotle crema. Top with cilantro, avocado, and a good squeeze of lime.

Shrimp Cook in Seconds
1–2 minutes per side. That's all. Overcooked shrimp are rubbery and tough. Watch the color — pink and curled means done. Remove immediately.

Chipotle Heat
Start with one chipotle pepper in the crema. Two is spicy. Adjust based on who's eating. The adobo sauce alone adds great flavor without the heat.

Double Tortilla
Two small corn tortillas per taco — one on top of the other. It's the street taco way. Sturdier and it won't fall apart when you load it up.

Slaw Goes First
The slaw at the bottom protects the tortilla from getting soggy. Then shrimp, then crema. Structure matters in a taco.
