Deviled eggs are one of those things that people hover around until they're gone. Make them right — smooth filling, balanced flavor, a dusting of paprika — and people will ask you to bring them everywhere you go.

Ingredients

The Eggs
Large eggs12
The Filling
Mayo3 tbsp
Yellow mustard1 tsp
Dill relish1 tsp
Apple cider vinegar½ tsp
Salt and white pepperto taste
Paprikafor garnish
Fresh chives or parsleyoptional garnish

Steps

  • 01Place eggs in a pot, cover with cold water by 1 inch. Bring to a boil, then cover, turn off heat, and let sit 11–12 minutes. Transfer immediately to an ice bath for 10 minutes.
  • 02Peel eggs and slice in half lengthwise. Pop out the yolks into a bowl. Set the whites on a serving plate.
  • 03Mash yolks with a fork until fine. Add mayo, mustard, relish, vinegar, salt, and white pepper. Mix until completely smooth. Taste and adjust.
  • 04Spoon or pipe filling into each egg white. Dust with paprika and garnish with chives. Refrigerate until ready to serve.

Ice Bath is Non-Negotiable
The ice bath stops the cooking instantly and makes peeling dramatically easier. Skip it and you fight the shells. Use it and they practically slide off.

Use a Piping Bag
A zip-lock bag with the corner snipped off works perfectly. Piping the filling looks clean and professional. Spooning it looks good too but piping looks intentional.

Older Eggs Peel Better
Fresh eggs from the store that morning are actually harder to peel. Eggs that are a week or two old peel much more cleanly. Plan ahead if you can.

White Pepper is the Move
White pepper instead of black keeps the filling looking clean and smooth with no visible specks. The flavor is slightly different — more floral and less sharp. Worth it.
