This is the salsa that makes people stop buying the jar. Once you make it in a blender and taste how fresh and bright it is, that grocery store jar just doesn't do it anymore. Five minutes. That's all it takes.

Ingredients

The Salsa
Canned whole tomatoes (28 oz)1 can
Rotel (diced tomatoes & chiles)1 can (10 oz)
White onion, roughly chopped¼ medium
Garlic cloves2 cloves
Jalapeño, roughly chopped1 pepper
Fresh cilantrohandful
Lime juice2 tbsp
Cumin½ tsp
Salt1 tsp
Sugar½ tsp

Steps

  • 01Add all ingredients to a blender or food processor. Pulse 8–10 times — you want it blended but still with some texture. Don't run it continuously or it turns into juice.
  • 02Taste and adjust — more lime for brightness, more salt for depth, more jalapeño for heat, more sugar if too acidic.
  • 03Refrigerate at least 30 minutes before serving. The flavor develops and deepens as it chills. Overnight is even better.
  • 04Serve cold with warm tortilla chips. Keep a jar in the fridge all week — it's good on eggs, tacos, grilled chicken, everything.

Canned Beats Fresh Here
For blender salsa, canned whole tomatoes give more consistent flavor year-round than fresh tomatoes. San Marzano or any good quality whole tomatoes work great.

Control the Heat
For mild salsa, remove jalapeño seeds and membrane. For medium, leave half the seeds. For hot, use the whole jalapeño plus an extra. You're in control.

Pulse, Don't Blend
Pulse in short bursts. Salsa should have texture — you can see bits of tomato and onion. Full blending gives you tomato juice. Stop before it's smooth.

Rest Before Serving
Fresh salsa tastes a little sharp right out of the blender. Give it 30 minutes in the fridge and the flavors mellow and come together beautifully.
