Ingredients

The Noodles & Protein
Lo mein noodles or spaghetti12 oz
Chicken, shrimp, or beef, sliced1 lb
Oil for cooking2 tbsp
The Vegetables
Cabbage, thinly sliced2 cups
Carrots, julienned1 cup
Bell pepper, sliced1 pepper
Green onions4 stalks
Garlic, minced4 cloves
Ginger, grated1 tsp
The Sauce
Soy sauce3 tbsp
Oyster sauce2 tbsp
Sesame oil1 tbsp
Brown sugar1 tbsp
Hoisin sauce1 tbsp

Steps

  • 01Cook noodles until just al dente, drain, toss with a bit of sesame oil to prevent sticking. Mix all sauce ingredients together. Have everything ready — this moves fast.
  • 02Heat oil in a wok or large skillet over HIGH heat. Cook protein 3–4 minutes until cooked through. Remove and set aside.
  • 03In the same pan, add cabbage, carrots, and pepper. Stir fry 3 minutes. Add garlic and ginger, cook 1 more minute.
  • 04Add noodles and protein back. Pour sauce over everything and toss constantly 2 minutes until sauce coats every noodle and everything is glossy. Top with green onions.

High Heat is Everything
Lo mein needs a very hot pan. Medium heat steams everything and makes it soggy. You want that slight char and wok flavor that only comes from real high heat.

Oyster Sauce is the Key
Oyster sauce adds a deep, slightly sweet savory note that makes lo mein taste like lo mein. Don't skip it. Find it in any grocery store's Asian foods section.

Spaghetti Works Fine
Can't find lo mein noodles? Spaghetti cooked al dente is a solid substitute. Toss with sesame oil right after draining so it doesn't clump together.
