Sloppy Joes are one of those meals that never gets old. Kids love them, adults love them — and when you make them from scratch, the whole table gets quiet for a minute. That's the reaction you're cooking for.

Steps

  • 01Brown ground beef in a skillet over medium-high, breaking it apart. Drain excess fat. Add onion and bell pepper, cook 4 minutes. Add garlic, cook 1 minute.
  • 02Add all sauce ingredients. Stir to combine. Bring to a simmer and cook 10–15 minutes, stirring occasionally, until sauce thickens and coats the meat.
  • 03Taste and adjust — more brown sugar for sweetness, more vinegar for tang, more Worcestershire for depth. The sauce should be bold and balanced.
  • 04Toast buns in butter until golden. Pile the meat high on the bottom bun. Serve immediately. Napkins required — this is the whole point.

Blu's Tips

🍔
Brioche Bun Upgrade
Swap the plain hamburger bun for a brioche bun. The slightly sweet, buttery bun with the tangy meat filling is an upgrade that costs almost nothing.
⚖️
Balance Sweet and Tangy
The sauce should hit sweet, savory, and tangy all at once. Taste it before serving. Brown sugar adds sweetness, vinegar adds tang. Find the balance that works for your family.
🌿
Let It Simmer
The longer the sauce simmers, the deeper the flavor. Ten minutes is good. Fifteen is better. The liquid reduces and the sauce gets more concentrated and flavorful.
🍞
Toast the Bun
A toasted bun holds up to the saucy filling without falling apart in your hands. Butter + skillet + 2 minutes. Always toast the bun.
