Fudgy brownies are a completely different creature from cakey brownies. More butter, more chocolate, less flour. That's the whole formula. Get that right and you'll have brownies that people ask about by name. The crinkle top is just a bonus.

Ingredients

The Brownies
Butter1 cup (2 sticks)
Granulated sugar2 cups
Eggs4 large
Vanilla extract2 tsp
Unsweetened cocoa powder¾ cup
All-purpose flour1 cup
Salt½ tsp
Baking powder½ tsp
Chocolate chips or chunks1 cup

Steps

  • 01Preheat oven to 350°F. Grease and line a 9x13 pan with parchment paper. Melt butter completely and let cool slightly.
  • 02Whisk melted butter and sugar together vigorously for 2 full minutes. This step creates the crinkle top. Don't rush it.
  • 03Add eggs one at a time, whisking well after each. Add vanilla. Whisk 1 more minute until mixture is pale and slightly thick.
  • 04Fold in cocoa powder, flour, salt, and baking powder until just combined. Don't overmix. Fold in chocolate chips.
  • 05Spread into prepared pan. Bake 23–27 minutes. A toothpick inserted 2 inches from the edge should come out with moist crumbs — not wet batter, not clean. That's fudgy.
  • 06Cool completely in the pan before cutting. At least 1 hour. Cutting warm brownies = collapsed edges. Wait and be rewarded.

More Butter, Less Flour
Fudgy brownies use a higher butter-to-flour ratio than cakey ones. Resist adding more flour. Less flour = more fudge. That's the whole science.

Whisk the Sugar Hard
Vigorously whisking the butter and sugar together for a full two minutes dissolves the sugar and creates that iconic shiny, crinkled top. Don't skip this step.
Underbake Slightly
Pull them when the center still looks slightly underdone. They continue cooking in the hot pan after you remove them. Overbaked brownies are cakey brownies.
