Ingredients

The Quesadilla
Large flour tortillas4 tortillas
Cooked chicken, shredded or sliced2 cups
Mexican blend cheese, shredded2 cups
Taco seasoning1 tsp
Butter or oil1 tbsp per quesadilla
Optional Add-Ins
Bell pepper and onion, sautéed½ cup
Black beans¼ cup
Jalapeñosto taste
For Serving
Sour cream, guacamole, salsaas desired

Steps

  • 01Season chicken with taco seasoning. Heat a large skillet over medium heat. Add butter.
  • 02Place one tortilla in the pan. Spread cheese on one half, then chicken, then more cheese on top. Fold the empty half over the filling.
  • 03Cook 2–3 minutes until the bottom is golden and crispy. Flip carefully. Cook another 2 minutes until both sides are golden and cheese is fully melted.
  • 04Rest 1 minute before cutting into 3 wedges. Serve with sour cream, guacamole, and salsa on the side.

Medium Heat
High heat browns the outside before the cheese melts inside. Medium heat gives you time for both to happen together. That's the difference between crispy and properly done.

Cheese on Both Sides
Put cheese on the tortilla first, then filling, then more cheese on top. The cheese acts as glue — it holds the filling in place when you flip. Both layers are essential.
Wait for the Melt
Don't flip too early. When the edges start to look slightly transparent and you can see cheese melting at the seam — that's when it's ready to flip. Patience makes perfect quesadillas.

Rest Before Cutting
Give it 60 seconds before you cut it. The cheese sets slightly so everything stays inside when you slice. Cut immediately and the filling falls out everywhere.
