Ingredients

The Salad
Elbow macaroni2 cups dry
Celery, finely diced3 stalks
Red onion, finely diced¼ cup
Green bell pepper, diced½ pepper
Hard boiled eggs, chopped3 large
Sweet pickle relish3 tbsp
The Dressing
Mayo¾ cup
Yellow mustard2 tbsp
Apple cider vinegar1 tbsp
Sugar1 tbsp
Salt and pepperto taste

Steps

  • 01Cook macaroni in heavily salted water until tender — slightly past al dente for salad. Rinse with cold water and drain. Toss with a drizzle of olive oil to prevent clumping.
  • 02Whisk dressing ingredients together. Taste and balance — creamy, tangy, slightly sweet. Adjust seasoning before mixing in.
  • 03Combine cooled pasta, celery, onion, pepper, eggs, and relish. Fold in dressing gently. Coat everything evenly.
  • 04Cover and refrigerate at least 2 hours — overnight is best. The pasta absorbs the dressing and the flavors come together. Add extra mayo or a splash of vinegar before serving if needed.

For pasta salad, you want the pasta fully tender — it's eaten cold and you want a softer bite. Al dente pasta in a cold salad tastes undercooked. Go a touch further.

Pasta absorbs dressing as it sits. Macaroni salad always needs more dressing after refrigerating. Make a little extra and stir in before serving. It refreshes the whole dish.
