The Casserole
Rotisserie chicken, shredded3 cups
Cottage cheese, full fat2 cups
Cream cheese, softened4 oz
Shredded mozzarella1½ cups
Garlic cloves, minced3
Italian seasoning1½ tsp
Salt and pepperto taste
Egg1
The Topping
Shredded mozzarella½ cup
Parmesan, grated¼ cup
Fresh parsleyfor garnish

Preheat and Prep
Preheat oven to 375°F. Grease a 9x13 baking dish.

Blend the Cottage Cheese
Blend cottage cheese in a blender or food processor until completely smooth and creamy. This is the secret step.

Make the Filling
Mix blended cottage cheese, cream cheese, 1 cup mozzarella, garlic, Italian seasoning, egg, salt and pepper until combined. Fold in shredded chicken.

Fill and Top
Spread mixture into prepared baking dish. Top with remaining mozzarella and parmesan.

Bake Until Bubbly
Bake 30 to 35 minutes until cheese is golden and edges are bubbling.

Sprinkle with fresh parsley and let rest 5 minutes before serving.

Use full fat cottage cheese for the richest creamiest result. Low fat works but the texture is slightly thinner.
