Chia pudding is one of those things that sounds like health food but tastes like dessert for breakfast. You stir it together in five minutes, put it in the fridge, wake up the next morning and breakfast is waiting for you. Thick, creamy, and endlessly customizable.

Chia seeds¼ cup
Milk of choice1 cup
Vanilla extract½ tsp
Honey or maple syrup1-2 tbsp
Pinch of salt1
Topping Ideas
Fresh berrieshandful
Sliced banana½
Granola¼ cup
Almond butter1 tbsp
Honey drizzleto taste

Instructions

Mix It Together
Combine chia seeds, milk, vanilla, sweetener, and salt in a jar or bowl. Stir well to combine.

Stir Again After 5 Minutes
Let sit 5 minutes then stir again vigorously to break up any clumps of chia seeds.

Refrigerate Overnight
Cover and refrigerate at least 4 hours or overnight until thick and creamy.
⏱ Minimum 4 hours — overnight is best

Check the Texture
In the morning stir the pudding. It should be thick like pudding. Too thick — add a splash of milk. Too thin — let it sit another hour.

Add Your Toppings
Top with fresh fruit, granola, nut butter, or whatever sounds good to you. Serve cold.
