Beef & Egg Noodle Casserole
Ingredients
- 1 lb ground beef
- 1 can cream of mushroom soup
- 2 cups egg noodles, uncooked
- 1 cup frozen peas
- 1 medium onion, diced
- 2 cloves garlic, minced
- ½ cup shredded cheese
- ½ cup beef broth
- Salt & pepper to taste
Instructions
- Preheat oven to 375°F. Cook egg noodles until just under done, drain and set aside.
- Brown ground beef with onion and garlic in a skillet. Drain fat.
- Mix in cream of mushroom soup and beef broth. Stir until smooth.
- Add noodles and frozen peas, stir to combine. Season with salt and pepper.
- Pour into a greased baking dish. Top with shredded cheese.
- Bake 25–30 minutes until bubbly and golden on top. Let sit 5 minutes before serving.
Potato & Beef Stew
Ingredients
- 1 lb ground beef
- 4 medium potatoes, diced
- 2 carrots, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 32 oz beef broth
- 1 can diced tomatoes
- 1 tsp paprika
- Salt & pepper to taste
Instructions
- Brown ground beef in a large pot over medium heat. Drain excess fat.
- Add onion and carrots, cook 4–5 minutes until softened. Add garlic, cook 1 minute.
- Stir in paprika, then add beef broth and diced tomatoes.
- Add diced potatoes. Bring to a boil.
- Reduce heat and simmer 25–30 minutes until potatoes are fork tender.
- Season with salt and pepper. Serve with biscuits or bread.
