There is nothing more comforting than a homemade apple pie cooling on the counter. The whole house smells like cinnamon and butter and something good is about to happen. Use store bought pie crust if you need to — nobody will judge you and the filling will carry it.

Ingredients

The Filling
Apples, peeled and sliced6 cups
Granulated sugar¾ cup
Brown sugar¼ cup
All-purpose flour3 tbsp
Cinnamon1½ tsp
Nutmeg¼ tsp
Lemon juice1 tbsp
Butter, cut into pieces2 tbsp
The Crust
Pie crusts2 rounds
Egg, beaten1
Sugar for sprinkling1 tbsp

Instructions

Step by step

Preheat and Prep
Preheat oven to 425°F. Place one pie crust into a 9-inch pie dish and press gently to fit. Set aside.

Make the Filling
Toss sliced apples with both sugars, flour, cinnamon, nutmeg, and lemon juice until evenly coated.

Fill the Pie
Pour filling into the crust mounding slightly in the center. Dot with butter pieces distributed evenly over the filling.

Add the Top Crust
Place second crust over filling. Trim edges and crimp to seal. Cut several slits in top for steam to escape. Brush with beaten egg and sprinkle with sugar.

Bake
Bake at 425°F for 15 minutes then reduce heat to 350°F and bake another 35 to 40 minutes until golden and bubbling.

Cool Before Cutting
Cool at least 2 hours before cutting. The filling needs time to set or it will run out when you slice it.

Use a combination of Granny Smith for tartness and Honeycrisp or Fuji for sweetness. Mixing varieties gives you complexity and the best texture.

Store Bought Crust is Fine
Refrigerated pie crust from the store is perfectly good. Focus your energy on making the filling exceptional and nobody will notice.

Protect the Edges
Cover the pie crust edges with foil or a pie shield after the first 20 minutes to prevent burning while the filling finishes cooking.

Serve Warm with Ice Cream
