The Potatoes
Baby potatoes or small Yukon golds2 lbs
Olive oil3 tbsp
Garlic powder1 tsp
Onion powder1 tsp
Smoked paprika1 tsp
Salt and black pepperto taste
Fresh parsleyfor garnish
Dipping Sauce
Sour cream½ cup
Mayonnaise2 tbsp
Horseradish1 tsp
Garlic powder½ tsp

Preheat and Prep
Preheat oven to 400°F. Line a baking sheet with parchment paper.

Score the Potatoes
Place each potato between two chopsticks or wooden spoon handles. Make crosshatch cuts down to the chopsticks — they stop you from cutting all the way through. The potato fans open like a bloom.

Season Generously
Toss scored potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Work the seasonings into the cuts.

Roast Until Crispy
Place potatoes cut-side up on the prepared baking sheet. Roast 40 to 45 minutes until golden, crispy on the edges, and tender inside.

Make the Dipping Sauce
Mix sour cream, mayonnaise, horseradish, garlic powder, salt, and pepper. Refrigerate until ready to serve.

Garnish and Serve
Garnish with fresh parsley and serve hot with dipping sauce alongside.

Small Potatoes Work Best
Baby potatoes and small Yukons give you the best bloom effect and the crispiest edges. Large potatoes take too long and do not fan as beautifully.

The Chopstick Trick
Placing chopsticks on either side of the potato lets you cut crosshatch slices deep into the potato without cutting all the way through. The cuts allow the potato to fan open during roasting.

Season Into the Cuts
Work the oil and seasoning into the cuts with your fingers. Seasoning on the outside is good but seasoning deep inside every cut is what makes these special.

Add Cheese at the End
In the last 5 minutes of baking sprinkle shredded cheddar over the potatoes and let it melt into all the cuts. Incredible.
