Lasagna is one of the greatest foods ever made. But it takes hours and you have to do dishes forever. This soup gives you every single flavor — the meat, the tomato, the cheese, the pasta — in one pot in thirty minutes. Same love, way less work.

Blu's Tips

🍝
Cook Noodles Separately If Storing
If you plan to have leftovers, cook the noodles separately. Noodles left in the soup absorb all the broth overnight.
🥩
Italian Sausage Makes It Better
Italian sausage gives this soup a depth of flavor that ground beef alone can't match. Try half and half for the best of both.
🧀
Don't Skip the Ricotta
The ricotta dollop on top is what makes this taste like actual lasagna. It melts into the soup and makes every bite creamy and rich.
🍅
San Marzano Tomatoes
Use San Marzano crushed tomatoes if you can find them. Sweeter, less acidic, and the difference is noticeable.

How to Store It

Keep it fresh as long as possible

❄️
Refrigerator
4 Days
Store soup and noodles separately for best results. Reheat soup on stovetop and add noodles fresh.
🧊
Freezer
3 Months
Freeze the soup base without noodles. Cook fresh noodles when reheating for the best texture.
🔥
Reheat
Stovetop
Reheat on medium heat. Add extra broth as needed since the noodles absorb liquid as it sits.
🙏

All the love of lasagna without all the work. Sometimes simple is the best kind of beautiful.
