White chicken chili is what happens when you want all the comfort of chili but something that feels a little lighter and a little different. Creamy broth, tender chicken, white beans — it hits different on a cold night. This one disappears fast.

The Chili
Rotisserie chicken, shredded3 cups
Olive oil2 tbsp
Yellow onion, diced1
Garlic cloves, minced4
Green chiles, canned4 oz
White beans, drained2 cans
Chicken broth4 cups
Cream cheese, softened8 oz
Cumin1½ tsp
Chili powder1 tsp
Salt and pepperto taste
Toppings
Sour creamas needed
Shredded Monterey Jackas needed
Fresh cilantroas needed
Tortilla chipsfor serving

Sauté the Base
Heat olive oil in a large pot over medium heat. Add onion and cook 5 minutes until softened. Add garlic and cook 1 more minute.

Add the Good Stuff
Stir in green chiles, white beans, chicken broth, cumin, and chili powder. Bring to a simmer.

Make It Creamy
Add softened cream cheese in chunks and stir until fully melted into the broth.

Add the Chicken
Stir in shredded rotisserie chicken and simmer everything together for 15 minutes. Season with salt and pepper to taste.

Serve and Top
Ladle into bowls and top with sour cream, shredded cheese, cilantro, and tortilla chips on the side.

Rotisserie Chicken Is the Move
Using a store-bought rotisserie chicken saves 45 minutes and adds incredible flavor. Don't cook chicken from scratch for this one.

Mash Some Beans
Mash about a quarter of the white beans before adding to the pot. It thickens the chili naturally without any flour or cornstarch.

Soften the Cream Cheese First
Let the cream cheese sit out for 30 minutes before adding. Cold cream cheese clumps. Soft cream cheese melts smooth.

Adjust the Heat
Use hot green chiles for more kick or mild for a family-friendly version. A pinch of cayenne also works if you want more heat.
