Baked beans done right have layers — sweet, smoky, savory, a little tangy. The oven does most of the work. You just have to give it the time. These beans are good enough to eat on their own. That's the bar.

Ingredients

The Beans
Canned navy beans or pinto beans, drained3 cans (15 oz)
Thick-cut bacon, chopped6 strips
Yellow onion, diced1 medium
Garlic, minced3 cloves
The Sauce
Ketchup¾ cup
Brown sugar¼ cup
Molasses2 tbsp
Worcestershire sauce1 tbsp
Yellow mustard1 tbsp
Apple cider vinegar1 tbsp
Smoked paprika1 tsp
Chicken broth½ cup

Steps

  • 01Preheat oven to 325°F. Cook bacon in a Dutch oven until crispy. Remove bacon, leaving drippings. Sauté onion in drippings 4 minutes. Add garlic, cook 1 minute.
  • 02Add all sauce ingredients and stir to combine. Fold in beans and bacon. Bring to a simmer on the stovetop.
  • 03Cover and bake 1.5 hours. Remove lid and bake another 30 minutes until sauce is thick, dark, and bubbling. Stir every 30 minutes.
  • 04Taste and adjust before serving — more vinegar for tang, more brown sugar for sweetness, more smoked paprika for depth. Serve hot alongside anything off the grill.

Uncover to Thicken
The last 30 minutes uncovered is when the sauce reduces and caramelizes into that thick, dark glaze. Cover the whole time and you get soup. Uncover and you get baked beans.

Slow Cooker Option
After the stovetop step, transfer everything to a slow cooker. Low for 6–8 hours with the lid off for the last hour. Hands-off and just as good.
