Ingredients

The Foster
Ripe bananas, halved lengthwise4 bananas
Butter4 tbsp
Brown sugar¾ cup
Cinnamon½ tsp
Banana liqueur (optional)2 tbsp
Dark rum¼ cup
Vanilla ice creamfor serving

Steps

  • 01Have ice cream scooped and ready in bowls before you start — this comes together fast and needs to be served immediately.
  • 02Melt butter in a heavy skillet over medium heat. Add brown sugar and cinnamon. Stir until sugar dissolves and the mixture starts to bubble — about 2 minutes.
  • 03Add banana liqueur if using. Place banana halves cut-side down in the sauce. Cook 2 minutes per side until caramelized and just softened.
  • 04Add rum to the pan. If you want to flambé, carefully tilt the pan toward the flame or use a long lighter. Let it burn 30–45 seconds, then extinguish by covering or swirling. Spoon over ice cream immediately.

Ripe But Firm
Use bananas that are ripe and sweet but still firm enough to hold their shape in the pan. Overripe bananas fall apart when heated. You want them to caramelize, not dissolve.

Ice Cream Ready First
Scoop the ice cream before you start cooking — always. The bananas take 8 minutes and need to be served immediately hot over cold ice cream. No time to scoop after.

Flambé Safety
If you flambé, remove the pan from the heat before adding rum. Have a lid nearby to smother the flame. Never pour rum directly from the bottle over an open flame.

Dark Rum Makes It
Dark rum has the molasses and caramel notes that belong in this dish. Light rum is too neutral. This is not the place to be shy with the rum either — a full quarter cup.
