The BLT is proof that you don't need much to make something great. But every element has to be right. Crispy bacon — not chewy. Ripe tomato — not flavorless. Cold lettuce. Good mayo. Toast the bread. That's the whole recipe.

Ingredients

The BLT
Thick-cut bacon6 strips
Ripe tomato, sliced thick1 large
Iceberg or romaine lettuce4 leaves
Good white bread or sourdough4 slices
Mayogenerous

Steps

  • 01Cook bacon in a skillet over medium heat until crispy. Drain on a wire rack. Don't drain on paper towels — the rack keeps them crispier.
  • 02Toast bread until golden. Spread mayo generously on both slices — all the way to the edges. The mayo is a flavor layer, not a condiment. Don't be shy.
  • 03Season tomato slices lightly with salt and pepper right before building. This simple step wakes up the tomato's flavor completely.
  • 04Build: lettuce on the bottom (protects bread from tomato moisture), then tomato, then bacon. Top slice of toast. Press gently, cut diagonally. Eat immediately.

Crispy Bacon is the Rule
Chewy bacon in a BLT is a disappointment. Cook it until it's genuinely crispy. It should snap when you bend it. That texture contrast with the soft tomato is the whole point.

Ripe Tomato Only
An underripe, flavorless tomato ruins a BLT. This sandwich is seasonal — make it in summer when tomatoes are actually good. Season it with salt and pepper right before it goes on.

Lettuce Goes First
Putting lettuce between the bread and tomato creates a moisture barrier. It keeps the bread from going soggy. Structure matters in a sandwich.

Good Mayo Matters
Duke's, Hellmann's, or homemade — use real full-fat mayo. Low-fat mayo doesn't have the same richness. In a three-ingredient sandwich, every element has to carry its weight.
