Good coleslaw isn't soggy. It isn't too sweet. It has crunch, it has tang, and it has balance. The secret is salting the cabbage first to pull out moisture, then making a dressing that knows what it is. Simple and right.

Ingredients

The Slaw
Green cabbage, shredded½ head (6 cups)
Purple cabbage, shredded1 cup
Carrots, shredded2 large
Salt (for drawing out moisture)1 tsp
The Dressing
Mayo½ cup
Apple cider vinegar2 tbsp
Sugar1 tbsp
Dijon mustard1 tsp
Celery seed½ tsp
Salt and pepperto taste

Steps

  • 01Toss shredded cabbage with 1 tsp salt. Let sit 15 minutes. The salt draws out excess water so your slaw doesn't get watery. Squeeze out or pat dry.
  • 02Whisk dressing ingredients together. Taste and balance — the dressing should be creamy, tangy, and slightly sweet. Adjust vinegar, sugar, and salt as needed.
  • 03Toss cabbage and carrots with dressing. Start with ¾ of the dressing and add more to taste. You want every shred lightly coated, not drowning.
  • 04Cover and refrigerate at least 1 hour before serving — overnight is ideal. The flavors meld and the slaw softens just enough while keeping its crunch.

Salt the Cabbage First
This step draws out the moisture that would otherwise dilute your dressing and make the slaw watery. It takes 15 minutes and makes all the difference.

Purple Adds Color
Adding even a cup of purple cabbage makes the whole slaw visually stunning. It also adds a slightly different texture and flavor. Worth it every time.
Make It Ahead
Coleslaw is always better after sitting overnight. The dressing penetrates and the flavors balance. Make it the day before any cookout or gathering.
