Crispy Baja Fish Tacos with Mango Slaw

Ingredients

The Fish
White fish fillets (cod, tilapia, mahi)1.5 lbs
All-purpose flour1 cup
Cornstarch¼ cup
Chili powder, cumin, garlic powder1 tsp each
Cold beer or sparkling water1 cup
Salt1 tsp
Oil for frying2 cups
Mango Slaw
Purple cabbage, shredded2 cups
Fresh mango, diced1 mango
Lime juice2 tbsp
Cilantro, chopped¼ cup
Jalapeño, minced1 small
Honey, salt1 tsp each
Lime Crema
Sour cream½ cup
Lime juice and zest1 lime
Garlic powder, saltpinch each
Corn tortillas12 small

Steps

  • 01Make the slaw and crema first. Toss all slaw ingredients together and refrigerate. Mix crema and set aside. Both get better as they sit.
  • 02Cut fish into 3-inch strips. Whisk flour, cornstarch, spices, and salt together. Slowly whisk in cold beer until batter is smooth and thick enough to coat a spoon.
  • 03Heat oil in a skillet to 350°F. Dip fish strips in batter, let excess drip off. Fry 3–4 minutes per side until golden and crispy. Drain on a wire rack.
  • 04Warm tortillas over a flame or dry skillet. Build the taco: crema first, then slaw, then fish. Finish with extra lime and cilantro.
