Slow Cooker French Dip Sandwich

Tender shredded beef piled on a toasted hoagie with melted provolone, served with rich au jus for dipping. This sandwich makes a regular Tuesday feel like something to remember.

The French dip sandwich is one of the great ones. Tender beef, melted cheese, a crusty hoagie — and then you dip it into that warm au jus and everything gets better. Set it in the slow cooker in the morning and come home to this.

Ingredients

The Beef
Chuck roast3 lbs
Beef broth2 cups
Soy sauce2 tbsp
Worcestershire sauce1 tbsp
Garlic cloves, smashed4 cloves
Onion powder, thyme, pepper1 tsp each
Bay leaves2
The Sandwich
Hoagie or sub rolls6 rolls
Provolone or Swiss cheese12 slices
Butter for toasting2 tbsp

Steps

  • 01Place roast in slow cooker. Mix broth, soy sauce, Worcestershire, garlic, and seasonings. Pour over roast. Add bay leaves. Cook on LOW 8 hours or HIGH 5 hours.
  • 02Remove roast and shred with two forks. Strain the cooking liquid — that's your au jus. Discard bay leaves and garlic. Taste the au jus and season if needed.
  • 03Butter rolls and toast cut-side down in a skillet until golden. Top with beef and cheese and broil 2 minutes until cheese melts.
  • 04Serve sandwiches with warm au jus in a small bowl on the side. Dip and don't look back.

Chuck Roast is Ideal
Chuck has the fat and connective tissue that breaks down into tender, shreddable beef after hours in the slow cooker. Lean cuts won't give you the same result.

Strain the Au Jus
The cooking liquid is pure flavor. Strain it through a fine mesh strainer to remove any solids. What's left is your dipping sauce — don't pour it out.

Provolone is Classic
Provolone melts beautifully and has a mild flavor that doesn't compete with the beef. Swiss works great too. Skip anything too sharp or it overwhelms the sandwich.

Toast the Roll
A toasted roll holds up to the juicy beef without going soggy immediately. Butter it and toast it in the pan before loading it up. That crust makes a difference.
