Ingredients

The Chicken
Boneless chicken thighs, cubed2 lbs
Cornstarch½ cup
Egg whites2
Salt and pepperto taste
Oil for frying2 cups
The Sauce
Soy sauce3 tbsp
Hoisin sauce2 tbsp
Rice vinegar2 tbsp
Brown sugar3 tbsp
Sesame oil1 tsp
Garlic, minced3 cloves
Ginger, grated1 tsp
Dried red chilis or red pepper flakes1–2 tsp
Cornstarch slurry (1 tbsp each)to thicken

Steps

  • 01Toss chicken cubes in egg whites, then coat with cornstarch seasoned with salt and pepper. Rest 10 minutes before frying.
  • 02Heat oil to 375°F. Fry chicken in small batches 3–4 minutes until golden and crispy. Drain on wire rack. For extra crispy, fry a second time for 1 minute.
  • 03In a wok over high heat, briefly toast the dried chilis in a small amount of oil. Add garlic and ginger, cook 30 seconds. Add all sauce ingredients and bring to a simmer.
  • 04Whisk in cornstarch slurry and stir until sauce thickens and coats a spoon. Toss crispy chicken in sauce right before serving. Plate over rice with sesame seeds.

Fry once at 350°F to cook through, let rest 2 minutes, then fry again at 375°F for 1 minute. The second fry drives out moisture and creates an exceptional crust.
