Homemade egg rolls have a crunch that the frozen ones just can't match. That snap when you bite in — that's what you're cooking for. Get the filling right, seal them tight, and fry them hot. The result is worth it.

Ingredients

The Filling
Ground pork1 lb
Cabbage, finely shredded3 cups
Carrots, shredded1 cup
Garlic, minced3 cloves
Ginger, grated1 tsp
Soy sauce2 tbsp
Sesame oil1 tsp
Green onions, sliced3 stalks
To Wrap & Fry
Egg roll wrappers1 package
Egg wash (1 egg + 1 tbsp water)for sealing
Oil for frying3 cups
Sweet chili saucefor dipping

Steps

  • 01Cook pork in a skillet, breaking it apart. Add garlic and ginger, cook 1 minute. Add cabbage and carrots, stir fry 3–4 minutes until wilted. Season with soy sauce and sesame oil. Cool completely before wrapping.
  • 02Place a wrapper diamond-side facing you. Put 3 tbsp filling in the center. Fold the bottom corner up over filling, fold the sides in, then roll tightly to the top. Seal the edge with egg wash.
  • 03Heat oil to 350°F. Fry egg rolls in batches of 3–4, turning occasionally, 3–4 minutes until deep golden and crispy.
  • 04Drain on a wire rack. Serve immediately with sweet chili sauce. The crunch is best in the first 10 minutes.

Cool the Filling First
Hot filling in the wrapper creates steam that makes the wrapper soggy before you even fry it. Let the filling cool completely — or make it a day ahead and refrigerate.

Seal Every Edge
Egg wash is the glue. Brush it on every folded edge and press firmly. A leaky egg roll explodes in the oil and makes a mess. Seal it well.

350°F is the Sweet Spot
Too hot and the outside burns before the inside warms through. Too cool and they absorb oil. 350°F gives you even golden color and a cooked through filling.

Freeze Before Frying
Assembled egg rolls freeze beautifully raw. Lay on a sheet pan to freeze individually, then bag them. Fry straight from frozen — add 1–2 extra minutes of cook time.
