Ingredients

The Beans
Fresh green beans, trimmed1.5 lbs
Mushroom Cream Sauce
Butter3 tbsp
Cremini mushrooms, sliced8 oz
Garlic, minced3 cloves
All-purpose flour3 tbsp
Chicken broth1 cup
Heavy cream¾ cup
Soy sauce1 tsp
Salt, pepper, thymeto taste
The Topping
French fried onions (French's)1.5 cups

Steps

  • 01Preheat oven to 375°F. Blanch green beans in boiling salted water 4 minutes, then transfer to an ice bath to stop cooking. They should be bright green and just tender.
  • 02Melt butter in a skillet over medium-high. Sauté mushrooms 5–6 minutes until browned. Add garlic, cook 1 minute. Whisk in flour and cook 2 minutes.
  • 03Gradually whisk in broth and cream. Add soy sauce. Simmer 4–5 minutes until thick and creamy. Season with salt, pepper, and thyme. Taste and adjust.
  • 04Combine beans and sauce in a baking dish. Top with 1 cup of fried onions. Bake 20 minutes until bubbling. Add remaining onions and bake 10 more minutes until crispy and golden.
