A grilled cheese is the simplest thing you can make in a kitchen. But there's a difference between a grilled cheese and a perfect grilled cheese. Low heat. Butter on the bread. Patience. That's the whole lesson.

Ingredients

The Sandwich
Good white, sourdough, or brioche bread2 slices
Butter, softened1.5 tbsp
American, cheddar, or Gruyère2–3 slices
Mayo (optional — see tips)1 tsp per side

Steps

  • 01Butter the outside of both bread slices generously — all the way to the edges. If using mayo, spread a thin layer on top of the butter for an extra golden crust.
  • 02Place cheese between the unbuttered sides. Heat a skillet over medium-LOW heat. This is the key — low and slow gives you golden bread and fully melted cheese at the same time.
  • 03Place sandwich in the pan. Cook 3–4 minutes until the bottom is deep golden brown. Peek underneath before flipping — it should be a rich, even golden color.
  • 04Flip carefully. Cook another 3–4 minutes until the second side matches. Press lightly with a spatula. The cheese should be fully melted and starting to ooze at the edges.
  • 05Rest 1 minute before cutting. Cut diagonally. Pull it apart slowly and enjoy that cheese pull. Serve with tomato soup — always.

Medium-Low is the Rule
High heat browns the bread before the cheese melts. Medium-low lets both happen at the right time. The golden bread and melted cheese should finish together.

The Mayo Trick
Spreading a thin layer of mayo on top of the butter before grilling produces an even more golden, slightly crispier crust. Try it once and you'll always do it.

Mix Your Cheeses
American melts best. Sharp cheddar tastes best. Combine them — two slices American, one slice sharp cheddar. The blend gives you perfect melt and real flavor.
