A proper New York cheesecake needs patience more than anything else. The water bath keeps it from cracking. The long slow cooling keeps it from sinking. You cannot rush it. But when you finally slice into it — dense creamy perfect — you will understand completely why it was worth every minute.

The Crust
Graham cracker crumbs2 cups
Sugar¼ cup
Butter, melted½ cup
The Filling
Cream cheese, softened32 oz
Sugar1½ cups
Sour cream1 cup
Vanilla extract2 tsp
Eggs4
All-purpose flour3 tbsp

Instructions

Step by step

Make the Crust
Preheat oven to 325°F. Mix graham cracker crumbs, sugar, and melted butter. Press firmly into bottom of a 9-inch springform pan. Bake 10 minutes then cool.

Beat the Cream Cheese
Beat softened cream cheese until completely smooth — at least 3 minutes. No lumps at all. This is the foundation of everything.

Add Remaining Ingredients
Mix in sugar, sour cream, vanilla, and flour until smooth. Add eggs one at a time mixing on low speed just until each one disappears.

Water Bath Bake
Wrap springform pan in foil. Pour filling over cooled crust. Place pan in a larger roasting pan and add hot water halfway up the sides. Bake 60 minutes.

Cool Slowly
Turn oven off. Crack door open and leave cheesecake inside for 1 hour. Then cool at room temperature 1 more hour.

Refrigerate Overnight
Refrigerate at least 8 hours or overnight before removing from pan and serving. The patience is the secret ingredient.

Everything Room Temperature
Cream cheese eggs and sour cream must all be completely room temperature. Cold ingredients cause lumps that you cannot beat out later.

Water Bath is Non-Negotiable
The water bath creates steam that prevents cracks and keeps the texture perfectly creamy. Skip it and you risk a cracked dry cheesecake.

Cool in the Oven
The slow cooling in the turned-off oven prevents the top from cracking or sinking. The sudden temperature change from a hot oven to a cold room is what causes problems.
