Lemon bars are deceptively simple and completely satisfying. The contrast between that buttery, crumbly shortbread and the bright, tangy lemon filling — that's a balance that never gets old. Dust with powdered sugar right before serving. Not before.

Ingredients

Shortbread Crust
Butter, softened1 cup
Powdered sugar½ cup
All-purpose flour2 cups
Salt¼ tsp
Lemon Filling
Eggs4 large
Granulated sugar1.5 cups
Fresh lemon juice⅔ cup (4–5 lemons)
Lemon zest2 lemons
All-purpose flour¼ cup
Powdered sugar (for dusting)¼ cup

Steps

  • 01Preheat oven to 350°F. Line a 9x13 pan with parchment. Mix butter, powdered sugar, flour, and salt until crumbly. Press firmly and evenly into the pan. Bake 18–20 minutes until lightly golden.
  • 02While crust bakes, whisk eggs, sugar, lemon juice, lemon zest, and flour together until smooth. Don't use a blender — whisking keeps it from getting foamy.
  • 03Pour lemon filling over the hot crust immediately after it comes out of the oven. Return to the oven and bake 20–22 minutes until the filling is just set — it should jiggle very slightly in the center.
  • 04Cool completely at room temp, then refrigerate at least 2 hours before cutting. Dust generously with powdered sugar right before serving.

Fresh Lemon Only
Bottled lemon juice is flat and slightly bitter in a way that shows in lemon bars. Fresh lemons only. The filling is the whole dessert — give it real lemon.

Pour on Hot Crust
Pouring the lemon filling onto the hot crust immediately creates a bond between the two layers. A cooled crust makes the filling separate and slide. Hot crust, always.

Chill Before Cutting
Lemon bars need to be fully chilled and set before you cut them. Warm bars crumble and the filling smears. Two hours minimum — overnight gives you perfect clean cuts.

Dust Right Before Serving
Powdered sugar absorbs moisture and disappears if you dust too early. Dust right before serving so every bar has that beautiful snowy finish when it hits the table.
