There are two kinds of mac and cheese — the kind from a box and the kind that makes people go silent at the table. This is the second kind. Three cheeses, a custard base, baked until the top gets that golden crust. That's the one.

Ingredients

The Pasta
Elbow macaroni1 lb
The Custard
Eggs3 large
Evaporated milk1 can (12 oz)
Whole milk1 cup
Butter, melted½ cup
Salt, pepper, mustard powder1 tsp each
Garlic powder½ tsp
The Cheese
Sharp cheddar, shredded2 cups
Colby Jack, shredded1.5 cups
Cream cheese, cubed4 oz

Steps

  • 01Preheat oven to 350°F. Cook macaroni until just al dente — slightly underdone. Drain and return to pot. Stir in butter and cream cheese until melted.
  • 02Whisk eggs, evaporated milk, whole milk, and all seasonings together. Fold in 2½ cups of the shredded cheese into the pasta mixture.
  • 03Pour pasta into a greased 9x13 baking dish. Pour the egg-milk mixture over the top, pressing to submerge the pasta.
  • 04Top with the remaining cheese. Bake 30–35 minutes until the custard is set and the top is golden and bubbly. Rest 10 minutes before serving.

Shred Your Own Cheese
Pre-shredded cheese has anti-caking powder that makes the custard grainy. Buy blocks and shred them yourself. This one step changes the entire texture of the final dish.

Southern baked mac and cheese uses eggs and evaporated milk to create a custard that sets in the oven. That's what makes it creamy and sliceable instead of soupy.

Undercook the Pasta
Pull the pasta before it's fully done. It continues cooking in the oven for 35 minutes. Fully cooked pasta going into the oven comes out mushy.
Rest Before Serving
The custard needs 10 minutes to finish setting after it comes out of the oven. Cut it too early and it falls apart. Rest it and it slices clean and beautiful.
