Ingredients

The Chicken
Boneless chicken thighs, cubed2 lbs
All-purpose flour½ cup
Cornstarch¼ cup
Egg, beaten1 large
Salt and pepperto taste
Oil for frying2 cups
Orange Sauce
Orange juice (fresh)½ cup
Orange zest1 orange
Soy sauce3 tbsp
Brown sugar3 tbsp
Rice vinegar2 tbsp
Garlic, minced3 cloves
Ginger, grated1 tsp
Red pepper flakes½ tsp
Cornstarch + water (slurry)1 tbsp each

Steps

  • 01Toss chicken cubes in beaten egg, then dredge in flour and cornstarch mixture seasoned with salt and pepper. Let sit 5 minutes so coating adheres.
  • 02Heat oil to 350°F. Fry chicken in batches 3–4 minutes until golden and cooked through. Drain on a wire rack. Don't crowd the pan.
  • 03In a separate saucepan, combine all sauce ingredients except the cornstarch slurry. Bring to a simmer over medium heat, 3 minutes.
  • 04Whisk in cornstarch slurry. Stir constantly until sauce thickens and becomes glossy, about 2 minutes. Taste and adjust sweetness or heat.
  • 05Toss crispy chicken in the sauce immediately before serving. Serve over steamed rice topped with sesame seeds and green onions.

Fresh Orange Only
Fresh orange juice and zest gives you that bright, real orange flavor. Bottled juice tastes flat. For a dish called orange chicken, the orange needs to be the real thing.
Toss Right Before Serving
Toss the chicken in sauce right before serving. Chicken sitting in sauce for 10 minutes loses its crunch. Crispy chicken + hot sauce = the whole experience.
