Mix Dry Ingredients
Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.

Mix Wet Ingredients
In a separate bowl whisk together buttermilk, eggs, melted butter, and vanilla.

Combine Gently
Pour wet into dry and fold gently until just combined. Batter will be lumpy. Lumpy batter makes fluffy pancakes. Smooth batter makes flat ones.

Rest the Batter
Let batter rest 5 minutes while you heat your griddle over medium heat. This rest makes a real difference in fluffiness.

Cook Until Bubbles Form
Lightly butter the pan. Pour quarter cup batter per pancake. Cook until bubbles form on surface and edges look set — about 2 minutes. Flip once and cook 1 more minute.

Lumps in pancake batter are not mistakes. They are air pockets that make your pancakes fluffy. Smooth batter means overmixed and the pancakes will be flat and tough.

Too high and the outside burns before the inside cooks. Medium heat gives you golden color with a fully cooked fluffy center every time.

Add Mix-ins After Pouring
Pour your batter first then drop blueberries or chocolate chips on top. This distributes them more evenly than mixing them into the batter.

Keep Them Warm
Place finished pancakes on a baking sheet in a 200 degree oven while you cook the rest. They stay warm and nobody eats alone while you are still at the stove.
