Italian Pasta Salad Loaded with Everything Good

Rotini tossed with Italian dressing, salami, olives, pepperoncini, fresh vegetables, and Parmesan. Bright, bold, and satisfying. The pasta salad people go back for twice at the cookout.

Pasta salad is one of those dishes that rewards generosity. More olives, more salami, more pepperoncini — the more you put in, the better it gets. Don't be shy with the ingredients. Load it up.

Ingredients

The Pasta
Rotini pasta12 oz
The Mix-Ins
Salami, quartered4 oz
Black olives, sliced1 can
Pepperoncini, sliced¼ cup
Cherry tomatoes, halved1 cup
Cucumber, diced1 medium
Red onion, thinly sliced¼ cup
Bell pepper, diced1 pepper
Parmesan, shaved or grated½ cup
The Dressing
Italian dressing (good quality)¾ cup
Red wine vinegar2 tbsp
Italian seasoning, garlic powder1 tsp each
Salt and pepperto taste

Steps

  • 01Cook rotini in heavily salted water until al dente. Drain and rinse with cold water to stop cooking. Toss with a drizzle of olive oil to prevent sticking.
  • 02While pasta cools, prep all your mix-ins. Everything cut small enough to get a bit of each in every forkful.
  • 03Combine pasta and all mix-ins in a large bowl. Mix dressing with red wine vinegar and seasonings. Pour over and toss well.
  • 04Taste and adjust — more vinegar for tang, more seasoning for depth. Refrigerate at least 1 hour. Add Parmesan right before serving.

Rinse the Pasta
For cold pasta salad, rinsing stops the cooking and cools it fast. This is the one time rinsing pasta is the right call — it prevents clumping too.

Extra Dressing on the Side
Pasta absorbs dressing as it sits. Make a little extra to add before serving. A pasta salad that's been in the fridge overnight needs a refresh of dressing.

Pepperoncini is the Secret
That little tangy bite from pepperoncini is what makes Italian pasta salad taste like Italian pasta salad. Don't substitute or skip them.

Parmesan Last
Add Parmesan right before serving. If you add it early, it dissolves into the dressing instead of sitting in visible, flavorful pieces throughout the salad.
