Peanut butter cookies are one of the most satisfying cookies to make because the reward is immediate and obvious. You can smell them baking from every room. That rich, roasted peanut butter smell — that's what a good kitchen smells like.

Ingredients

The Cookies
Butter, softened½ cup
Peanut butter (creamy)½ cup
Granulated sugar½ cup
Brown sugar, packed½ cup
Egg1 large
Vanilla extract1 tsp
All-purpose flour1¼ cups
Baking soda¾ tsp
Salt½ tsp

Steps

  • 01Preheat oven to 350°F. Beat butter, peanut butter, and both sugars together until creamy, about 2–3 minutes. Add egg and vanilla, beat until combined.
  • 02Whisk flour, baking soda, and salt together. Gradually mix into the peanut butter mixture until a soft dough forms.
  • 03Roll dough into 1.5-inch balls. Place on a parchment-lined baking sheet. Press a fork down twice in perpendicular directions to create the classic crosshatch pattern and flatten slightly.
  • 04Bake 10–12 minutes until edges are set and lightly golden. Centers will look underdone — that's correct. Cool on the pan 5 minutes before moving.

Blu's Tips

🥜
Creamy Peanut Butter
Use commercial creamy peanut butter like Jif or Skippy — not natural peanut butter. Natural separates and makes the texture inconsistent. Save the natural stuff for toast.
✝️
The Fork Press
The crosshatch pattern isn't just decorative — it flattens the cookie so it bakes evenly all the way through. Without it, the center stays raw while the edges overbake.
🍫
Peanut Butter Blossoms
Skip the fork and press a Hershey's Kiss into the center right when they come out of the oven. The chocolate melts slightly into the hot cookie. That's a peanut butter blossom.
The 3-Ingredient Version
1 cup peanut butter + 1 cup sugar + 1 egg. Mix, roll into balls, fork press, bake at 350°F for 10 minutes. Gluten-free and surprisingly good. Perfect when you need cookies fast.
