Homemade Philly Cheesesteak — The Real Deal

Thinly shaved ribeye, caramelized onions and peppers, melted provolone — all packed into a toasted hoagie roll. This is the sandwich that made a city famous, made at home.

A Philly cheesesteak is one of those sandwiches that has to be done right or it's just not the same thing. Thin beef, caramelized onions, melted cheese, good roll. Get those four things right and you've got something worth talking about.

Ingredients

The Steak
Ribeye steak, shaved thin (or sirloin)1.5 lbs
Salt and black pepperto taste
Garlic powder½ tsp
Oil for cooking2 tbsp
The Veggies
Yellow onion, thinly sliced2 large
Green bell pepper, sliced1 pepper
Mushrooms, sliced (optional)1 cup
Butter2 tbsp
The Finish
Provolone or American cheese8 slices
Hoagie rolls4 rolls

Steps

  • 01Freeze the steak for 30 minutes before slicing — partially frozen beef slices paper-thin much more easily. Slice against the grain as thin as possible.
  • 02In a large skillet, cook onions and peppers in butter over medium heat 15–20 minutes until deeply caramelized and golden. Remove and set aside.
  • 03Increase heat to high. Add oil. Cook steak in a thin layer, chopping and spreading with a spatula as it cooks, 3–4 minutes until no pink remains. Season with salt, pepper, and garlic powder.
  • 04Return onions and peppers to the pan. Mix together. Lay cheese slices over the top, cover 1 minute to melt.
  • 05Toast hoagie rolls cut-side down. Scoop the filling directly into the roll. Serve immediately — this sandwich waits for no one.

Freeze for Thin Slices
Partially freezing the beef is the move for getting paper-thin slices at home without a deli slicer. 30 minutes in the freezer makes all the difference.

Caramelize the Onions
This takes 15–20 minutes and cannot be rushed. Those sweet, golden onions are what separates a great cheesesteak from just a steak sandwich. Give them the time.

Ribeye is the Classic
Ribeye has the fat marbling that makes the filling rich and tender. Sirloin works and is more affordable. Whatever you use — slice it thin and cook it hot.

Cheese on Top to Melt
Lay the cheese directly on the meat in the pan and cover with a lid for 60 seconds. The steam melts it perfectly without making the bread soggy.
