Some things just work. Velveeta queso is one of them. You can make it fancy or you can make it right — sometimes those are the same thing. This is the dip people hover over. Keep it warm and keep the chips coming.

Ingredients

The Queso
Velveeta, cubed16 oz
Rotel (tomatoes & green chiles)1 can (10 oz)
Whole milk¼ cup
Ground chorizo or breakfast sausage½ lb (optional)
Garlic powder, cumin½ tsp each
Green onions, jalapeño (garnish)to taste

Steps

  • 01If using chorizo, cook in a skillet over medium heat until browned. Drain excess fat and set aside.
  • 02In a medium saucepan over low heat, combine cubed Velveeta, Rotel (undrained), and milk. Stir constantly as it melts — low and slow prevents scorching.
  • 03Once fully melted and smooth, stir in garlic powder, cumin, and cooked chorizo if using. Taste and adjust heat and seasoning.
  • 04Transfer to a slow cooker on WARM to keep it at serving temperature. Garnish with green onions and jalapeño slices. Serve with tortilla chips.

Velveeta scorches fast on high heat and gets grainy. Keep it on low the whole time and stir constantly. Patience gives you smooth, pourable queso.

Adding cooked chorizo transforms this from a dip into a destination. Spicy pork crumbles throughout the cheese makes every chip worth fighting for.

Transfer to a small slow cooker on WARM setting for parties. Queso that stays hot stays perfect. Cold queso gets thick and stops being fun.

The Scratch Version
Want real cheese queso? Use a roux base with Monterey Jack and sharp cheddar — but you'll need to add sodium citrate to keep it smooth. Velveeta handles that chemistry for you.
