Rice pudding is one of the oldest desserts in the world and there's a reason it's lasted. Warm, sweet, creamy, simple — it asks very little and delivers something that feels like being taken care of. Some recipes don't need improving. They just need to be made.

Ingredients

The Pudding
Short-grain white rice (Arborio works great)¾ cup
Whole milk4 cups
Sugar⅓ cup
Vanilla extract1.5 tsp
Cinnamon stick1
Saltpinch
Heavy cream (optional, for richness)¼ cup
Ground cinnamon for servingto taste

Steps

  • 01Combine rice, milk, sugar, cinnamon stick, and salt in a medium saucepan. Bring to a gentle simmer over medium heat, stirring frequently to prevent sticking.
  • 02Reduce heat to low. Cook 35–40 minutes, stirring every few minutes, until rice is very tender and the mixture has thickened to a creamy, pudding consistency.
  • 03Remove cinnamon stick. Stir in vanilla extract and heavy cream if using. Taste and adjust sweetness.
  • 04Serve warm in bowls with a dusting of cinnamon on top. Or refrigerate until cold and serve chilled — both are completely delicious in different ways.

Short-Grain Rice
Short-grain or Arborio rice releases starch as it cooks, which is what creates that thick, creamy texture. Long-grain rice makes a thinner, less creamy pudding.

Stir Frequently
Rice pudding wants to stick to the bottom and scorch. Stir every 3–4 minutes the whole time. A heavy-bottomed saucepan helps too. The stirring is not optional.

It Thickens More as it Cools
Pull the pudding off heat when it's slightly looser than you want. It will thicken as it cools. If you cook it to the final thickness, it'll be too stiff when you serve it.

Lemon Zest Variation
Add the zest of one lemon with the cinnamon stick. The citrus brightens the whole dish and adds a layer that makes it taste like something special. Try it once.
