Crispy roasted potatoes are one of the most reliable things you can make. Simple ingredients, simple process. But the crispiness — that golden, shatteringly crisp outside — that takes a hot oven and not crowding the pan. Give them space to roast, not steam.

Ingredients

The Potatoes
Yukon Gold or red potatoes, cubed2 lbs
Olive oil3 tbsp
Garlic powder1 tsp
Smoked paprika1 tsp
Fresh rosemary, chopped1 tbsp
Fresh thyme1 tsp
Salt and black peppergenerously
Garlic cloves, whole (optional)6 cloves

Steps

  • 01Preheat oven to 425°F. This high heat is what gives you the crispy crust — don't go lower.
  • 02Toss potatoes with olive oil, all seasonings, and herbs. Spread in a single layer on a large baking sheet — no piling. If they're crowded, they steam instead of roast.
  • 03Roast 20 minutes without touching. Then flip each piece and roast another 15–20 minutes until deep golden and crispy on multiple sides.
  • 04Taste immediately — season with a pinch more salt if needed. Serve hot with a squeeze of lemon or fresh parsley if you want to dress them up.

Single Layer Always
This is the most important rule in roasting. Crowded potatoes steam from each other's moisture. A single layer with space between pieces = crispy all around.

425°F Minimum
Low oven temperature roasts slowly and makes soft, not crispy, potatoes. High heat drives out moisture fast and creates that golden crust. Don't go below 400°F.
Don't Flip Too Early
Let potatoes develop a crust before flipping — about 20 minutes. Flipping too early tears off the crust you just built. Wait until they release cleanly from the pan.

Season After Too
A small pinch of salt right when they come out of the oven makes the flavor pop. The hot surface absorbs it differently than the raw potato did. It's a finishing move.
