Shrimp scampi is the dish that makes people think you know what you're doing in the kitchen. Garlic, butter, white wine — it sounds fancy but it comes together in 15 minutes. That's a secret worth keeping.

Ingredients

The Shrimp
Large shrimp, peeled & deveined1.5 lbs
Salt, pepper, red pepper flakesto taste
The Sauce
Butter6 tbsp
Olive oil2 tbsp
Garlic cloves, minced6 cloves
Dry white wine½ cup
Lemon juice (fresh)3 tbsp
Lemon zest1 lemon
Fresh parsley, chopped¼ cup
The Pasta
Linguine or spaghetti12 oz
Reserved pasta water½ cup

Steps

  • 01Cook pasta in heavily salted water until al dente. Save ½ cup pasta water before draining. Set pasta aside.
  • 02Season shrimp with salt, pepper, and red pepper flakes. Heat 2 tbsp butter and olive oil in a large skillet over medium-high. Sear shrimp 1–2 minutes per side until pink and just cooked. Remove immediately.
  • 03In the same pan, reduce heat to medium. Add remaining butter and garlic. Cook garlic 1 minute — fragrant but not browned.
  • 04Add wine and lemon juice. Simmer 3 minutes until reduced by half. Add lemon zest.
  • 05Add pasta and shrimp back to the pan. Toss everything together, adding pasta water a splash at a time until the sauce coats the pasta and everything is glossy.
  • 06Finish with fresh parsley. Serve immediately with crusty bread to soak up every drop of that sauce.

Don't Overcook Shrimp
Shrimp cook in 2 minutes. They're done when they curl into a C shape and turn pink. An O shape means overcooked. Pull them fast.

Cook with Wine You'd Drink
Cheap cooking wine makes cheap sauce. Use a dry white wine you'd actually pour into a glass. Pinot Grigio or Sauvignon Blanc work great.

Pasta Water is Magic
The starch in pasta water emulsifies the butter and wine into a silky sauce. Add it a splash at a time and watch the sauce come together.
